Siobhán Sweeney is a native of nearby Falcarragh, Co Donegal. Her earliest food memory is of cracking crab claws with a hammer on the back step of her home. She trained as a chef in Ballymaloe, Co Cork and honed her skills in many fine kitchens around the globe – always learning, always experimenting. After more than 25 years “at the stove”, Siobhán will be exchanging her chef’s whites for more suitable attire in her new role as Restaurant manager and Maître d’. Her wealth of experience will bring an added dimension to the dining pleasure of customers old and new.
We are serious about food, about supporting artisan producers and about promoting sustainability.
“We combine flavours from around the globe to enhance, not smother great locally grown, caught or farmed produce. Ingredients are treated respectfully and knowledgably, by our experienced and talented team of chefs. We love the dishes they conceive and execute with imagination, flair and passion.
We pickle, preserve, ferment and infuse to help create a sustainable product with minimal waste.
We forage, upcycle, recycle and occasionally bicycle to be as environmentally responsible as possible.
We offer expert wine-pairing advice to complement our menu.
