Siobhan Sweeney is a native of nearby Falcarragh, Co.Donegal. Her earliest food memory is of cracking crab claws with a hammer on the back step of her home. She trained as a chef in Ballymaloe, Co. Cork and then worked far and wide – always learning, always experimenting. After more than 25 years “at the stove”, Siobhan still retains her original passion for quality ingredients, prepared with honesty and respect.
Peter Byrne is originally from ‘the big smoke’ – Dublin – and he just loves wine! So, together they make the perfect pairing…Peter has a knack for paring up selected wines with meals. His background in theatre & film also adds to a marriage of talents that creates the right food in the right setting.
Siobhan and Peter are serious about food, about supporting artisan producers and about promoting sustainability.
“We combine flavours from around the globe to enhance, not smother great locally grown, caught or farmed produce. Ingredients are treated respectfully and knowledgably, by our experienced and talented team of chefs. We love the dishes they conceive and execute with imagination, flair and passion.
We pickle, preserve, ferment and infuse to help create a sustainable product with minimal waste.
We forage, upcycle, recycle and occasionally bicycle to be as environmentally responsible as possible.
We offer expert wine-pairing advice to complement our menu. And we offer our food and wine in customer-friendly sit-in and dine-at-home options, to make life a little easier!”
